Here at the Amigos Garden, we plant seasonally and one of our favorite winter crops is KALE!!! 🥬🥬🥬 This great vegetable that we use at the cafe is packed with vitamins and minerals. A superfood, kale is high in vitamins A, C, and K, folate, phosphorus, potassium, calcium, and other nutrients. According to foodrevolution.org, making kale part of your dinner plate can help lower cholesterol, prevent colds, and help with brain development and muscular degeneration, among other benefits.
A good goal is to fill half of your plate with fruits and veggies. Kale is a great way to start! It’s delicious when prepared in the following ways: steamed, stir-fried, sautéed, roasted, or raw. At the Mustard Seed Cafe, we often add kale to salads, pasta dishes, and casseroles! Just know that everything will be o-kale when you incorporate more veggies into your diet!
