    As we enter the cooler months in the Amigos Garden, the winter garden begins to take shape. One of the garden’s favorite staple winter crops is kale. Kale is a versatile green that we use throughout the winter/spring seasons at the Mustard Seed Cafe. In the Amigos Garden, we grow two varieties of Kale: White Russian Kale and Red Russian Kale; both are delicious and nutritious!

    Try eating kale raw, cooked, in soup, snuck into smoothies or dressings, oven-baked as chips, on pizza, and many other ways. This is why kale is a fan favorite for the gardeners and the cafe – you can incorporate it into endless dishes.

    • Kale has been grown since the Middle Ages.
    • Kale chips are not only nutritious but easy to make.
    • Kale is related to cabbage, Brussels sprouts, and collards.
    • High in Vitamins A, C, and K.
    • High in the nutrient lutein, which helps keep eyes and vision healthy.
